FIELD: food industry.
SUBSTANCE: method of production of preserved apricot compote provides for preparation of recipe components, their cutting, drying in the microwave field at preset process parametres, roasting and grinding of chicory, rye grain roasting, mixing of chicory and rye grain in mass ratio 7:3 and extraction of the obtained mixture with drinking water at preset process parametres, the obtained extract is filtered, a syrup is made on its basis, apricots and the syrup are packaged, sealed and sterilised.
EFFECT: compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in target product without shortening product's shelf life.
