FIELD: food industry.
SUBSTANCE: invention relates to brewing technology. Method involves mixing tangerine rind and hops in the mass ratio of 1:10 and extracting the obtained mixture with liquid nitrogen followed by separating corresponding miscella, cutting girasol, drying it in the microwave field until residual humidity is about 20% and at the microwave field providing heating the girasol bits to the temperature of 80-90°C inside the bits for 1 hour and roasting, mixing girasol and malt in the mass ratio of 1:(10-25), charging the obtained mixture into the cryomiller shell, impregnating the obtained mixture with separated miscella at the same time raising the pressure in the shell, releasing the pressure until it equals the atmospheric one at the same time freezing the mixture, cryomilling it in evolved nitrogen medium, pouring drinking water and saccharifying the mixture to produce wort, adding brewer's yeast into the wort, performing incipient fermentation, afterfermentation of the young beer and its filtering.
EFFECT: reduced process technology duration and improved foam stability of the target product.
