FIELD: food industry.

SUBSTANCE: invention is related to food industry, namely to the process of manufacturing coffee substitutes. The method provides for preparing the recipe components, extracting dill seeds using liquid nitrogen with correspondent miscella separation. The chicory roots are cut, dried in a microwave field at given process parametres and roasted. Barley grains, chestnuts and soya beans are roasted. The chicory roots, barley grains, chestnuts and soya beans are mixed together. The obtained mixture is impregnated with the separated miscella while simultaneously increasing the pressure.

EFFECT: method enables to obtain a flavoured coffee drink using a waste-free technology.
