FIELD: food industry.
SUBSTANCE: invention is related to food industry, namely to technology of coffee substitutes production. Method involves preparing ingredients, extracting orange rind by liquid nitrogen separating corresponding miscella, cutting chicory, drying it in microwave field at preset process parametres and roasting, roasting barley grain, chestnuts and soya. Chicory, barley grain, chestnuts and soya are mixed, obtained mixture is impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen are performed.
EFFECT: method enables to produce flavoured coffee drink according to nonwaste technology.
