SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of recipe ingredients, extraction of almond blossoms by liquid nitrogen with corresponding miscella separation. Girasol is cut, dried in microwave field at preset process parametres. Rosehips, apples and pears are cut, dried in microwave field at preset process parametres and dried by convective method. Barley grain is roasted. Girasol is mixed with barley grain, rosehips, apples and pears. The obtained mixture is impregnated by separated miscella with simultaneous pressure boost. Depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen follow.
EFFECT: invention ensures obtaining flavoured coffee drink according to nonwaste technology.
