FIELD: food industry.

SUBSTANCE: invention relates to food industry, namely to technology used to produce coffee substitutes. Method provides for preparation of recipe components, extraction of almond flowers by liquid nitrogen with corresponding miscella separation, girasol/sunflower drying in microwave field at preset process parametres and frying, frying, drying in microwave field at preset process parametres of rosehips, apples and pears by convective method, barley grain frying, mixing girasol/sunflower, rosehips, barley grain, apples and pears. Then the obtained mixture is impregnated by separated miscella with simultaneous pressure boost and pressure releases until the pressure equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.

EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
