SUBSTANCE: invention is related to coffee substitutes production technology and represents manufacturing method of instant powder for flavoured coffee drink. Recipe components are prepared. Lemon peels are extracted by liquid nitrogen with corresponding miscella separation. Chicory is cut, dried in microwave field at preset process parametres and roasted, barley grain and rye grain are roasted. Chicory is mixed with barley grain and rye grain, the obtained mixture is impregnated by separated miscella with simultaneous pressure boost. Pressure is released till atmospheric pressure with simultaneous freezing of mixture and cryomilling of it in medium of evolved nitrogen.
EFFECT: invention enables to produce flavoured coffee drink according to nonwaste technology.
