FIELD: food industry.

SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method involves preparing recipe ingredients, extracting orange rind by liquid nitrogen with corresponding miscella separation, cutting girasol, drying it in microwave field until its residual moisture content is about 20% with the microwave field power heating girasol until 80-90°C inside the bits for 1 hour minimum and roasting girasol, roasting barley malt, mixing girasol with barley malt in mass ratio 7:3, impregnating the obtained mixture with separated miscella and raising the pressure at the same time. Then the pressure is released down to the atmospheric pressure and the mixture is being frozen at the same time and cryomilled in medium of evolved nitrogen.

EFFECT: method enables to obtain new flavoured coffee drink according to nonwaste technology.
