SUBSTANCE: group of inventions relates to the manufacturing technique of coffee substitutes. The methods provide for preparation of the recipe components, extraction of flavoured vegetable raw material envisaged by the method versions with liquid nitrogen to separate the appropriate miscella. One performs cutting oyster plant, its drying in microwave field at preset process parametres and frying. Barley malt is roasted. Oyster plant and barley malt are mixed. The produced mixture is impregnated with the separated miscella with simultaneous increase of pressure up to a value that corresponds to pressure of saturated nitrogen vapours at the temperature of impregnation. One performs depressurisation till atmospheric pressure with simultaneous freezing of the mixture and its cryomilling in the medium of nitrogen released.
EFFECT: methods provide for producing new flavoured coffee beverage of non-traditional raw materials, for improvement of the beverage organolepticl properties due to its enrichment with extracted substances of miscella and their preservation.
