FIELD: food industry.
SUBSTANCE: invention refers to process of production of coffee substitutes. The procedure consists in preparing recipe components and in extracting coriander with liquid nitrogen whereupon corresponding miscella is separated. Further, yacon is cut, dried in SHF field at specified parametres of the process and roasted; orange pressed skins are also dried in SHF field at specified parametres of the process and convectively finish dried; yacon and orange pressed skins are mixed and soaked with separated miscella. Simultaneously, first pressure is built up then dropped to atmospheric; at the same time mixture is frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: invention facilitates production of new aromatised coffee drink out of non-traditional raw material by waste less technology.
