FIELD: food industry.
SUBSTANCE: invention refers to process of production of coffee substitutes. The disclosed procedure consists in extracting fennel with liquid nitrogen and in separating corresponding miscella. Further yacon is prepared, cut and dried with orange pressed skins in SHF field at specified parametres of process; yacon is roasted and orange pressed skins is convective finish dried. Yacon and orange pressed skins are mixed; produced mixture is soaked with separated miscella at simultaneous pressure built-up; further pressure is dropped to atmospheric and at the same time is frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: procedure facilitates production of new aromatised coffee drink out of non-traditional raw material by waste less technology.
