FIELD: food industry.
SUBSTANCE: invention refers to process of production of coffee substitutes. The procedure consists in preparing recipe components, in extracting cardamom vine with liquid nitrogen and in separating corresponding miscella. Further, girasol/sunflower is cut, dried in SHF field at specified parametres of the process and roasted. Also grain of barley and oats, acorns and nut kernels are roasted. Girasol/sunflower, grain of barley and oats, acorns and nut kernels are mixed. Produced mixture is soaked with separated miscella; simultaneously pressure is built-up then dropped to atmospheric; at the same time mixture is frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: procedure facilitates production of new aromatised coffee drink out of non-traditional raw material by waste less technology.
