FIELD: food industry.
SUBSTANCE: invention refers to diary industry, particularly to procedures of lactoserum extracting The procedure of extracting proteins out of lactoserum consists in introducing flocculant into curds lactoserum; as flocculant there is used poly-acryl-amide modified with glycine by means of effecting with ultrasonic radiation of 80 kHz frequency during 20 minutes. Also flocculant is added at amount of 0.2-0.4% of weight of lactoserum and is used in form of 0.05% solution of poly-acryl-amide modified with glycine at amount of 0.15% of flocculant weight.
EFFECT: facilitating completeness of protein substances extraction, reduced duration of process and reduced expenditure of added reagent.
