FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and in particular - to methods for isolating protein substances from milk whey. The method envisages addition of a serine-modified flocculant to dairy whey which flocculant is represented by highly anionic polyacrylamide modified with serine with a 90% ionisation degree. The amount of flocculant added is 0.2-0.4% of the mixture weight.
EFFECT: invention enables more complete isolation of protein substances with preservation of their food and nutritional value as well as reduction of the process duration and the added reagent expenditure.
