FIELD: food industry.
SUBSTANCE: invention relates to food industry particularly to milk industry and can be used for production of milk-containing drinks. The method is characterised by the fact that milk-containing drink is prepared out of dry skim milk, butterfat substitute "Bonigrassa 55 RAN", drinking water, stabiliser "Multek", dietary supplement "Scullcap Extract", the drinking water intended for dissolving dry components is preheated to 95°C and cooled to 40±2°C so to reduce its hardness. The dry skim milk and standardisation component which is butterfat substitute "Bonigrassa 55 RAN" are reduced at 40±2°C, the reduced and standardised mixture is filtered and cooled to 6±1°C, the mixture is held at the cooling temperature for 3-4 hours so proteins get swollen and reach the density required. Then the mixture is heated to 42±2°C, stabiliser "Multek" is added, and it is refined at milk-purifying centrifugal separators, directed to homogenisation at 62±2°C and pressure 15±2.5 MPa, dietary supplement "Scullcap extract" is added, the mixture is pasteurised at 76±2°C and held for 20 sec, cooled to 4±2°C and directed to bottling and packaging in market containers.
EFFECT: invention enables to improve the drink quality owing to increased nutritive, biological and energy value, high organoleptic parametres, produce a functional drink with controlled fatty acid composition, increase biological effectiveness, intensify the process, increase production rate of the drink and extend the drink shelf life.
