SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for extraction of anise by liquid nitrogen with corresponding miscella separation. Then yacon is cut, dried in the microwave field at preset process parametres and roasted. Then grape refuse is dried in the microwave field at preset process parametres and dried up by convection. Then yacon is mixed with grape refuse in mass ratio and the obtained mixture is impregnated by the separated miscella with simultaneous pressure boost. Then the pressure is released down to the atmospheric pressure and the mixture is being frozen at the same time and cryomilled in medium of evolved nitrogen.
EFFECT: invention enables to obtain new flavoured coffee drink instant powder out of unconventional raw material according to nonwaste technology.
