SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. The method of production of instant powder to produce a flavoured yacon-grape drink involves extracting anisetree by liquid carbon nitrogen with corresponding miscella separation, preparing and cutting yacon, drying it in the microwave field for 1 hour minimum until its residual humidity is about 20% at the microwave field power providing warming the yacon inside the bits to 80-90°C and roasting, drying grapes refuse in the microwave field for 1 hour minimum until its residual humidity is about 20% at the microwave field power providing warming the grapes refuse to 80-90°C and drying it up by a convective method until its residual humidity is about 5%. The yacon and the grapes refuse are mixed in the mass ratio 3:2 by loading them into the cryomiller shell, the obtained mixture is impregnated by separated miscella with simultaneous pressure boost in the shell to the value corresponding to nitrogen saturation vapour pressure at the impregnation temperature and the pressure is released until it equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.
EFFECT: production of a flavoured coffee drink out of unconventional raw materials according to a nonwaste technology.
