FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of carrot preserves. Under the method carrots after preliminary preparation are packed in jars and undergo microwave heating at 2400±50 MHz frequency during 150-160 sec. After that the jars are filled with 97-98°C hot filler, sealed and sterilised in autoclave according to mode with following cooling in other autoclave or container. In accordance with mode
EFFECT: this enables sterilisation duration decreases combined with thermal energy and water saving.
