SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of fennel with liquid nitrogen. Afterwards according miscella is separated. Then yacon is cut, dried in microwave field at specified parametres of the process and fried, cutting is carried out. Then apples are dried in microwave field at specified parametres of the process, and their additional convective drying is carried out, black chokeberry is dried in microwave field at specified parametres of the process, and its additional convective drying of black chokeberry is carried out. Then yacon, apples and black chokeberry are mixed, produced mix is impregnated with separated miscella with simultaneous increase of pressure. Then pressure is reduced down to atmospheric value with simultaneous freezing of mix and its cryo-grinding in the medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
