SUBSTANCE: invention relates to technology used to produce coffee substitutes. Formula components are prepared using traditional technology. Almond blossom is extracted with liquid nitrogen as per traditional technology, and according miscella is separated. Prepared girasol-sunflower is cut. Cut girasol-sunflower and orange pulp are separately dried in microwave field down to residual moisture of around 20% at specified parametres of the process. Girasol-sunflower is fried as per traditional technology, and orange pulp is dried additionally by convective method down to residual moisture of around 5%. Girasol-sunflower and orange pulp are mixed in the mass ratio of 7:3. Produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of mix. Produced mix is cryo-ground in medium of released nitrogen to produce target product.
EFFECT: invention makes it possible to improve organoleptic properties of drink and to produce flavoured coffee drink from non-traditional raw materials.
