FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method of production includes preparation of the recipe components, their cutting, drying in microwave field at preset process parametres. Thereafter girasol-sunflower cutting and frying is carried out. Then one roasts barley grains, mix girasol-sunflower with barley grain in mass ratio 7:3. Extraction of obtained mixture by drinking water and at preset process parametres, filtering of obtained extract. After that preparation of syrup based on it, packing of grapes and syrup, sealing and sterilisation is carried out.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
