FIELD: food industry.
SUBSTANCE: invention is related to food industry, namely to technology of compote production. The method of grapes compote production involves ingredients preparation, cutting, drying in the microwave field, roasting and grinding of girasol-sunflower, roasting of barley malt. Mixing of girasol-sunflower and barley malt, extraction of the obtained mixture by drinking water, filtration of the obtained extract to be used to produce syrup. Then apples and syrup are packed, sealed and sterilised.
EFFECT: suggested method enables to produce compote with a coffee flavour and aroma tones, simplify technology and reduce quantity of boiled pieces of grapes in the end product.
