Method of production includes preparation of the recipe components, their cutting, drying in microwave field at preset process parametres. Thereafter yacon cutting and frying is carried out Then one roasts barley malt, mix yacon with barley malt in mass ratio 7:3. Extraction of obtained mixture by drinking water and at preset process parametres. After that filtering of obtained extract preparation of syrup based on it, packing of grapes and syrup, sealing and sterilisation is carried out.

EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
