SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of basil by liquid nitrogen to separate according miscella. Girasol-sunflower is cut, dried in microwave field at specified parametres of the process and fried. Pomegranate rind is cut and dried in microwave field at specified parametres of the process, and then is additionally dried till residual moisture content of around 5% by convective method. Earth-apple and sunflower hybrid and pomegranate rind are mixed in the weight ratio of 7:3, and produced mix is impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of mix. Finished mix is exposed to cryo-grinding in medium of released nitrogen.
EFFECT: invention provides for improvement of drink organoleptic properties due to its enrichment with extractive substance of miscella and their preservation.
