SUBSTANCE: invention refers to technology of coffee substitutes production and, particularly to manufacturing of flavoured yacon-pomegranate drink. Method comprises extracting black tea by liquid nitrogen with corresponding miscella separation, cutting, drying in microwave field at preset process parametres and frying yacon, cutting, drying in microwave field at preset process parametres and convective completing of drying pomegranate peels, mixing yacon and pomegranate peels, impregnating obtained mixture by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to obtain new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
