SUBSTANCE: invention is related to food industry, namely to technology of coffee substitutes production. Method provides for extraction of lemon rind by liquid nitrogen with corresponding miscella separation, cutting, drying in microwave field at preset process parametres and frying girasol/sunflower, cutting, drying in microwave field at preset process parametres and convective drying pomegranate peels. Girasol/sunflower and pomegranate peels are mixed, obtained mixture is impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to produce new flavoured coffee drink according to nonwaste technology.
