FIELD: food industry.

SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Medang is extracted by liquid nitrogen with corresponding miscella separation. Girasol/sunflower is prepared according to traditional technology and cut. Cut girasol/sunflower and orange refuses are dried separately in microwave field at preset process parametres till residual humidity about 20%. Girasol/sunflower is fried according to traditional technology, orange refuses are dried by convective method till residual humidity about 5% Girasol/sunflower is mixed with orange refuses in mass ratio 7:3, the obtained mixture is impregnated in the separated miscella with simultaneous pressure boost. It is followed by depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.

EFFECT: method allows to improve organoleptic properties of the drink and to produce flavoured coffee beverage out of unconventional raw material according to nonwaste technology.
