SUBSTANCE: invention refers to process of production of coffee substitutes, particularly to method consisting in extracting cinnamon laurel with liquid nitrogen, in separating corresponding miscella, in preparing, cutting and drying of girasol-sunflower in field of SHF at specified parametres of the process and in roasting it, in drying peach marc in field of SHF at specified parametres of the process and in convective finish drying it, in mixing girasol-sunflower and peach marc, in soaking produced mixture with separated miscella at simultaneous pressure build-up, in pressure drop to atmospheric and in simultaneous freezing of mixture with cryo-milling it in medium of precipitated nitrogen.
EFFECT: facilitating production of new aromatised coffee drink out of non-traditional raw material by non-waste process.
