FIELD: food industry.

SUBSTANCE: invention is intended for use in food industry to produce coffee substitutes. Method provides for extraction of Chinese magnolia with liquid nitrogen with separation of according miscella, yacon preparation, cutting, drying in microwave field at specified parametres of process and frying, grape pulp drying in microwave field at specified parametres of process and additional convection drying, mixing yacon and grape pulp, impregnation of produced mix with separated miscella with simultaneous increase of pressure, pressure reduction down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in medium of released nitrogen.

EFFECT: invention provides for production of new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
