FIELD: food industry.

SUBSTANCE: invention refers to food industry, namely to methods of micronising meat, fish, vegetable and other products in manufacturing industries. Method of food products micronising provides supply of raw materials, cutting its particles off with cutting tool consisting of a set of rotating crescent-shaped knives closed with a cover, and removal of forced meat. The feeding raw is captured and transferred with the cutting tool to the inner surface of the cover, where cutting of particles of raw material is carried out in a continuous mode with knives in which cutting edges are deployed at an angle a to the plane of their rotation and the angle α is set in a range from -15° to +15°, and removal of forced meat is carried out with acceleration.

EFFECT: invention enables to improve effectiveness of food products micronising and improve its quality, as well as to accelerate process of chopping.
