FIELD: food industry.
SUBSTANCE: anise-tree is extracted by liquid nitrogen with separation of the relevant miscella. Yacon is cut, dried in a microwave oven with the given parametres of the process, and then it is fried. Lemon refuses is dried in a microwave oven with the given parametres. Its convective drying is carried out. Yacon and lemon refuses are mixed. The obtained mixture is impregnated with separated miscella with simultaneous increase of pressure. Pressure is released up to atmospheric with simultaneous freezing of the mixture and its cryomilling in medium of the evolved nitrogen.
EFFECT: method enables to obtain new flavoured coffee drink from non-traditional raw materials using non-waste technology.
