FIELD: food industry.
SUBSTANCE: invention relates to technology for complex processing of vegetables, namely chicory. The method involves washing chicory, milling it, filling with acidified water until the pH of the extraction mixture is 5-6.5 with a ratio of phases 1:1, electrical contact heating of the obtained mixture to the temperature of 55-65°C, extraction for 30-40 minutes followed by separation of the extract and the meal, consistent transmission of the extract through membranes with a threshold retention of 6-8 kDa and 0.8-2 kDa, with low-molecular fraction returning to the stage of extraction, concentrating of the remaining fractions by reverse osmosis to the solids content of at least 15%, combining of concentrate of high-molecular fraction with the meal to obtain gelating concentrate, the remaining concentrate which is a solution containing inulin, purified from accompanying substances, is photo-sterilisated and packed into aseptic conditions.
EFFECT: method enables to implement complex processing of chicory with complete recycling of nutrient and bioactive substances.
