SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for preparation of recipe components, extraction of basil with liquid nitrogen to separate according miscella, yacon cutting, drying in microwave field at specified parametres of process and frying, rosehips cutting, drying in microwave field at specified parametres of process and convective additional drying, frying of barley grain, acorns, nut kernels, fruit stone kernels and soya, mixing of yacon, rosehips, barley grain, acorns, nut kernels, fruit stone kernels and soya, impregnation of produced mixture with separated miscella with simultaneous increase of pressure, pressure reduction down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in medium of released nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
