FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to technology of preserved compotes production. Method provides for preparation of formula components, yacon cutting, drying in microwave field at the specified parametres of process, frying and grinding, barley and rye grain frying. Mixing of yacon, barley and rye grain in the mass ratio of 2:2:1, extraction of produced mixture with drinking water at specified parametres of the process. Filtering of produced extract, making syrup on its basis, packing of plums and syrup, sealing and sterilisation.
EFFECT: method makes it possible to produce compote with coffee flavours with no coffee added to the formula, to simplify technology and reduce content of overcooked berries in finished product without reduction in its shelf life.
