FIELD: food industry.
SUBSTANCE: there is proposed a laboratory convective drying chamber-type unit for meat and fish products; it includes a thermally insulated body with a door, a working chamber, a plated design air cooler, a cooling machine, a thermostat, an inner air circulation system and a control unit. There is detachable thermally insulating partition with a control gate actuated by a servo driver additionally mounted in the working chamber between the air cooler and the object being dried. The servo driver operation in the drying process is controlled by the control unit.
EFFECT: unit allows to simplify the system for regulation air humidity in the drying unit working chamber with the air cooler temperature maintained below 0°C in order to freeze water condensate simultaneously ensuring rather exact and stable heating and humidity conditions of product drying.
