FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and can be used for production of soft rennet cheese with additives. The method includes the mixture pasteurisation, cooling down to a souring temperature, the mixture curdling, stirring, whey separation, cheese grain salting, formation, self pressing, packing. During the process of formation one adds pasteurised granular caviar of sturgeon fishes and dry caviar sol to the cheese grain mixture; the caviar sol is represented by a dried homogenisate which is produced in the course of intravital production of sturgeon fishes caviar; the caviar and caviar sol are taken in an amount of 3 - 10% and 0.1 - 1.5%, respectively.
EFFECT: invention allows to produce a product with high consumer and organoleptic properties, to increase nutritional value of cheese due to its enrichment with polyunsaturated fatty acids, B vitamins and potassium.
