FIELD: food industry.
SUBSTANCE: group of inventions relates to technology of production of diet flour confectionary for feeding of patients with sugar diabetes. Methods include preparation of recipe components, cutting of girasol-sunflower, its drying in SHF field at specified process parametres, after drying with convective method and cryogrinding in liquid nitrogen obtaining flour. Dough is prepared from wheat flour of superior quality, obtained by described technology flour from girasol-sunflower, yolks, salt, soda, vegetable oil, phospholipids and water. Dough is formed in form of sheets and baked. girasol or girasol-sunflower or yacon or chicory is cut, dried in SHF field at specified process parametres, roasted and cryogrinded in liquid nitrogen obtaining flour. Flour is mixed with cookery fat, dry milk, sweetener "Sladex" and wafer crumbs obtaining filling. Wafers are formed from sheets and filling.
EFFECT: obtained diabetic wafers have improved consistence and coffee taste and flavour without having coffee in composition.
