FIELD: food industry.
SUBSTANCE: group of inventions relates to manufacturing technique of coffee substitutes. One performs preparation of the recipe components, extraction of flavoured vegetable raw material envisaged by the method versions with liquid nitrogen to separate the appropriate miscella. Oyster plant and rosehips are cut, dried in microwave field at specified parametres of the process. Oyster plant, barley grains, acorns, nut kernels, fruit bones and soya are fried. Rosehips are additionally dried by convective method; oyster plant, rosehips, barley grains, acorns, nut kernels, fruit bones and soya are mixed. The separated miscella is impregnated by the produced mixture with simultaneous pressure boost and pressure release until it equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.
EFFECT: methods make it possible to produce new flavoured coffee drink from non-traditional raw materials, and also provide for improvement of organoleptic properties of drink due to its enrichment with extractive substances of miscella and their preservation.
