FIELD: food industry.
SUBSTANCE: Saccharomyces cerevisiae VKMP Y-3439 hybrid yeast strain is produced by method of hybridisation of LV-7 production strain and No 8 haploid strain. For mutant separation in LV-7 and No 8 strains respectively one causes mitochondrial mutation of respiratory distress and nuclear mutation of adenine deficit.
EFFECT: strain can efficiently grow on molasses raw material in semi-sterile conditions of commodity production and has a high constitutive maltase activity during 25 minutes.
