FIELD: biotechnology, microbiology. SUBSTANCE: invention relates to microbiological synthesis and presents a novel strain of yeast used for fermentation of molasses must in production of ethyl alcohol and baking yeast. The novel strain of alcoholic yeast Saccharomyces cerevisiae OH-1 is isolated from alcoholic works of Onezhsky hydrolytic plant and deposited in All-Union Collection of Industrial Microorganisms of institute "GosNIIgenetics" at number VKPM Y-2492. The strain ferments, except for hexoses, also pentoses (xylose and arabinose), shows very high value of growth rate (specific growth rate is 0.25-0.33 h-1), it grows in the wide range of pH and temperature (pH 3.8-5.5; t = 28-36 C). The strain sustains the enhanced concentrations of calcium hypochlorite in medium, up to 5 mg/l by active chlorine, ferments highly concentrated molasses syrups with content of dry matter 28-30% producing up to 11 vol. % of alcohol and baking yeast also. The strain provides accumulation of budding cells with high physiological activity in yeast generator, to 500-530 million cells/ml that corresponds to 60%. The use of the proposed yeast strain Saccharomyces cerevisiae OH-1 VKPM Y-2492 ensures to provide the high yield of ethyl alcohol and baking yeast.
