FIELD: food industry.
SUBSTANCE: invention is related to food industry, in particular to production of bakery products. The food supplement contains the following components, wt %: lactic acid - 17.7-35.0; sodium lactate - 26.6-37.6; acetic acid - 1.0-2.0; the rest is water.
EFFECT: application of the food supplement with optimised component and quantitative composition ensures improvement of quality of white bread and bakery products, its freshness preservation during a long period, prevention of bread affection by rope and mould.
