FIELD: food industry.
SUBSTANCE: invention relates to the food industry. In the proposed method one introduces into the kneading step a complex additive in amount of 0.05 % of the total flour weight, obtained by mixing nisin, betulin, ascorbic acid and calcium propionate on a differential screw mixer. Differential screw mixer is a container with flat bottom, in which two parallel horizontal shafts are rotated, equipped with flat blades, installed on shaft along helical line through gaps of 50 mm, at rotation of which with container cover closed there is performed both material mixing and its gradual movement along the apparatus. Ratio of the initial components in the complex additive is, wt. %: nisin 30, betulin 10, ascorbic acid 25, calcium propionate 35.
EFFECT: invention allows to reduce bread molding during storage, promotes suppression of potato disease of bread, allows to increase nutritive value due to application of betulin and ascorbic acid and to increase shelf life of bread till 7 days without loss of consumer properties.
