FIELD: food industry.
SUBSTANCE: dealcoholised refuses produced after pulp pressing during production of alcoholised infusions and removal of alcohol residues are filled with water in a 1:10-20 with the mixture pH brought to the 1.5-3.5 level by way of inorganic acid addition. The mixture is heated to 60-65°C and extracted during 45-180 minutes by way of subjecting the mixture to impact waves and 27-28 kV electric charges, the charges frequency being 0.1 Hz. Then the extract is filtered and concentrated till dry substances content is 16-18% with application of ultrafiltration polysulfanilamide membrane elements with a 20-50 nm pore size and their washing in the process of concentration every 20 minutes during 5 seconds and sediment discharge into the extract. After concentration one can perform pectin sedimentation with 90-95% rectified ethyl alcohol, the ultraconcentrate to alcohol ratio being 1:3, pH 1.7-1.9. Then pectin is separated from coagulant in the centrifugal forces action field and dried at a temperature of 50-55°C till residual moisture content is 8-10%.
