FIELD: canning industry.
SUBSTANCE: invention relates to methods for processing waste fruit and berry raw materials, and can be used for the production of pectin-containing powder. A method has been proposed for producing pectin-containing powder from small-fruited apple marc, in which frozen small-fruited apple marc is defrosted under microwave heating at a power of 750 W for 10 minutes, then the small-fruited apple marc is crushed on a knife chopper to a particle size of d = 1.5-2.5 mm, then the resulting apple mass is sent to an extractor, where in the presence of citric acid to bring the pH of the medium to 2.0-2.5 and a rotation speed of 2500 rpm at a temperature of 40-45°C 15-20 minutes, hydrolysis-extraction occurs, the resulting pectin-containing mass is dried to a dry matter content of 88-90%, then the dried pectin-containing mass is crushed to a particle size of 50 microns, the resulting pectin-containing powder with a soluble pectin content of 75-80% of soluble fraction of pectin in raw materials, is subjected to packaging and packing.
EFFECT: invention makes it possible to obtain a finished product with a high content of pectin substances, expand the raw material base and reduce environmental pollution through more complete use of secondary raw materials.
