FIELD: food-processing industry. SUBSTANCE: method involves conducting hydrolysis-extraction of pectin-containing raw material by cavitation processing in hydroacoustic extractor-desintegrator, with cavitation index K being within the range of 0.8-1.9; separating obtained pulp into liquid and solid phases by exposing to centrifugal force field, with separation index FR being within the range of 90-100; subjecting liquid phase to additional microfiltration by membranes with pore sizes of (1-10) •10-6 m; concentrating filtrate by ultrafiltration in solid substrate-backed ultrafiltering membranes, with liquid flow rate being 0.1-2.0 m/sec and pressure ranging from 0.5 to 3.1 kg/cm2; condensing in vertical double-body straight flow vacuum circulation film-type evaporator, with pressure in condenser being within the range of 0.09-0.093 MPa. Condensate containing 8-14% of pectin substance is dried at temperature of 75-92 C. EFFECT: increased efficiency, simplified method and improved quality of product. 11 cl
