FIELD: food industry.
SUBSTANCE: invention is related to bakery industry. The method for preparation of leaven for production of bread involves mixing rye flour and water, addition of distillery dregs of girasol and yeast by way of fermentation component, the mixture fermentation at 20-32°C for acidity to be 12-24 degrees.
EFFECT: invention enables to render the leaven preparation process less cost-intensive and more simple, increase the process performance by 30-40% and, at the same time, produce high quality bread of rye flour.
