FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe components preparation, cutting scorzonera, drying it in microwave field as preset process parametres, frying and cryomilling in liquid nitrogen, frying barley malt. Mixing scorzonera and barley malt in a mass ratio of 7:3. Extraction of the obtained mixture with drinking water at preset process parametres, obtained extract filtering, preparation of a syrup on its basis. Grapes and syrup are packaged, vacuum-sealed and sterilised.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled berries in end product.
