FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe components preparation, cutting dandelion root, drying it in microwave field as preset process parametres, frying and cryomilling in liquid nitrogen, frying rye grains. Mixing of dandelion root and rye grain in the mass ratio of 7:3. Extraction of produced mixture with drinking water at specified parametres of the process. Obtained extract filtering, preparation of syrup based on it. Black currants and syrup are packed, sealed and sterilised.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled berries in end product.
