FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe ingredients preparation, cutting scorzonera, drying it in microwave field at preset process parametres, roasting and milling of scorzonera, barley malt roasting, mixing of chicory and barley malt in mass ratio of 7:3. Then one performs extraction of the obtained mixture by drinking water at preset process parametres, obtained extract filtering, preparation of a syrup on its basis, packing of apples and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
