FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe ingredients preparation, cutting scorzonera, drying it in microwave field at preset process parametres, roasting and milling of scorzonera, barley malt roasting, mixing of chicory and barley malt in mass ratio of 7:3. Then one performs extraction of the obtained mixture by drinking water at preset process parametres, obtained extract filtering, preparation of a syrup on its basis, packing of quinces and syrup, sealing and sterilisation.
EFFECT: method makes it possible to produce compote with coffee flavours with no coffee added to the formula, to simplify technology and reduce content of overcooked fruit in finished product without reduction in its shelf life.
